Dry processing aid Belazim-Forma is a glucose oxydase-based enzymic product made by fermenting the Aspergillus niger microorganism strain and is intended for strengthening the gluten network of flour in baking and production of frozen semi-finished dough products.
Composition: filler (flour), glucose oxydase, ascorbic acid.
Presentation: loose powder, light cream to light brown color, packed in 5–25 kg paper or propylene bags with polyethylene inserts or polymeric film bags.

Mechanism of action
Belazim-Forma contributes to glucose oxidation with air oxygen, forming hydrogen peroxide that converts sulphydryl bonds into disulphide bonds. Ascorbic acid contributes to formation of disulfide bridges between neighboring sulfhydryl groups of gluten amino acids.
Efficacy
Belazim-Forma improves the quality parameters of finished products.

Operating temperature range: 20–50 °C
Use
Belazim-Forma is introduced in dry form together with other recipe components during dough kneading.
Belazim-Forma dosage depends on the process parameters for obtaining finished products, type of the raw materials used and finished product characteristics.

When working with the substance, use personal protection equipment: respirators, protective goggles and rubber gloves. Contact of the product with damaged skin or mucous membranes may cause slight irritation. In this case, rinse the affected area thoroughly with running water.
