Dry processing aid Belazim KS is a xylanase enzyme-based enzymic product made by fermenting the Trichoderma reesei microorganism strain and is intended for hydrolysis of nonstarch polysaccharides in grain processing products in order to form strong and well-developed gluten network, improve viscosity and viscoelasticity of the dough. Applied in baking and confectionery, macaroni production, as part of complex enhancers, and during production of frozen semi-finished dough products.
Composition: filler (flour/starch), xylanase.
Presentation: loose powder, light cream to light brown color, packed in 5–25 kg paper or propylene bags with polyethylene inserts or polymeric film bags.

Mechanism of action
Belazim KS hydrolyzes arabinoxylans to xylooligosaccharides, which in the baking production process prevents formation of pentosan complexes with gluten and contributes to improvement of rheological properties of the dough.

Use
Belazim KS is introduced in dry form together with other recipe components during dough kneading.
