Dry processing aid Belazim-Volume is an enzymic product containing a complex of amylases and xylanases produced by fermentation of the Aspergillus niger and Trichoderma reesei microorganism strains and is intended for hydrolysis of starch and nonstarch polysaccharides in frozen dough products and semi-finished flour products. It is used as a regulator of flour with low autolytic activity and strong gluten in baking processes and in production of frozen semi-finished products.
Composition: filler (flour), α-amylase, xylanase.
Presentation: loose powder, light cream to light brown color, packed in 5–25 kg paper or propylene bags with polyethylene inserts or polymeric film bags.

Mechanism of action
Belazim-Volume hydrolyzes α-1,4-glycoside bonds of the starch to dextrins and oligosaccharides and arabinoxylans to xylooligosaccharides, which contributes to an increase in the content of fermentable sugars and reduces viscosity of the dough.

Belazim-Volume improves viscoelasticity of dough and sensory parameters of finished products.

Operating temperature range: 45–65 °C
Use
Belazim-Volume is introduced in dry form together with other recipe components during dough kneading.
Belazim-Volume dosage depends on the process parameters for obtaining finished products, type of the raw materials used and finished product characteristics.
